GUMBO COOK-OFF OFFICIAL RULESÂ
1. Samples will be collected for judging at 11:00AM.Â
2. Only 1 gumbo entry per team registration is allowed. Gumbo must be cooked on site. Tent ​setup is available on Friday, October 4. Teams may begin cooking at 6am on October 5.Â
3. There are two Gumbo Cook-Off Categories. Gumbo Category must be selected on ​registration form. â–ª Chicken and Sausage Gumbo: Must be primarily poultry & sausage, and ​must not contain any seafood. â–ª Seafood Gumbo: Must contain seafood, as the primary ​ingredient. Gumbo entries containing seafood of any kind will be judged in the seafood ​category and must be registered as such. Other ingredients may be used such as tasso, ​turkey necks, etc. However, the judges’ samples must consist of juice and meat only, no ​rice.Â
4. Two pint containers will be provided for samples to be judged. Each must be filled ¾ with ​juice and meat, as intended for judging. Samples MUST be given in the containers provided by ​judges only! No exceptions. Samples given in any other containers/bowls will not be ​judged.Â
5. Each gumbo will be judged on: a. appearance b. flavor c. meat (seasoning/tenderness) d. ​overallÂ
6. First, Second, and Third places will be awarded for each category.Â
7. Cooking teams must provide a small, roof-only tent (10x10) as well as all necessary ​cooking utensils, tables, pots, burner, fuel, and any other items needed to complete the ​gumbo. Ice Chests allowed only for items necessary for cooking. No trailers or food ​trucks.Â
8. Teams will provide gumbo for public sampling for donations. Teams will be provided ​containers and utensils for public sampling of 75 servings.Â
9. Teams must provide their own rice. Electricity will not be provided, so rice may have to be ​prepared ahead of time. Participants will not be judged on the rice.Â
Pre-registration required by September 5, 2024. Entry Fee is $75 and is due at registration.
In the event Fatima Fest is canceled due to weather, entry fees will be considered donations ​to Our Lady of Fatima, and the cookoff will not be rescheduled.
Registration for this event represents the implied agreement to not hold any person(s), ​sponsor(s), or property owner(s) associated with this event responsible for any loss, ​damage, or injury to self or property while participating in this event.
